Epoisses de Burgundy is a stinky cheese made from cow’s milk in the Burgundy region of France. It is considered to be one of the greatest pungent cheeses in the world. Production of Epoisses as well as use of its name is protected by law. Epoisses de Burgundy is a washed rind cheese, meaning the whole wheel is frequently bathed in a marinade that could contain salt water, wine, cider and any concoction of herbs. The recipe is usually specific to and dictated by the region the cheese is made in.

Epoisses de Burgundy of the creamy variety is a very soft cheese and should be enjoyed at room temperature. Pair your Epoisses with crackers of bits of crusty bread to serve as a vessel for this thick and luscious spread.  If you are looking for a wine pairing, opt for a cool white wine. The combination will bring out the best in each.
