Our Shiba Maki Rolls are exotic and flavorful, perfect for appealing to a crowd that likes to try new things, or old things in new ways. We take your average garden variety cucumber and pickle it in a mixture of brine, soy sauce, vinegar, salt and sugar. This infuses the cucumber with almost every flavor possible; salty, tangy salty and sweet. To bring everything together, we wrap the cucumber, now technically a pickle in a thin sheet of nori and a layer of seasoned white sticky rice, with a sprinkling of toasted sesame seeds. The texture of pickled cucumber is crisp, but very tender, and the acidity and spice of the pickling juices is a perfect compliment to the moist and mellow rice.
