Ancho chili peppers are an incredibly potent flavor component of Latin and Mexican cuisine. They are smokey and spicy and their strong flavors are very fluid, allowing them to infuse into whatever dishes you add them too. To create this Sweet Ancho Sauce Rub we’ve combined Ancho chilies with cinnamon, spices, fresh herbs, sweet brown sugar and a splash of bourbon. This sauce makes a perfect rub, especially for big pieces of pork, intended to be cooked low and slow.
Marinating your proteins and hearty vegetables allows you to improve your food in several ways. One, you’re of course infusing your ingredients with lots of wonderful flavors.
