In this Rocchetta cheese, all three commonly used milks; cow, sheep and goat come together for a perfect balance of flavor and texture. The cheese is manufactured in Piedmont Italy by Caseificio dell'Alta Langa.
The bloomy, edible rind holds a double textured paste. The runny and buttery cream near the surface of the rind is strongly flavored of tang and earthiness. The core of the cheese is fluffy and rich with a milder flavor.
